  1. Cook the noodles
    Bring a large pot of water to a boil. Add ramen noodles and cook according to package directions, about 2-3 minutes until tender. Drain and rinse immediately under cold water until completely cooled. Drain well.
  2. Prepare the dressing
    In a small bowl, whisk together sesame oil, rice vinegar, soy sauce, honey, and grated ginger until well combined. Set aside.
  3. Combine the salad ingredients
    In a large bowl, combine the cooled noodles, cucumber, carrots, red bell pepper, and chicken (if using). Pour the dressing over the noodle mixture and toss gently to coat all ingredients evenly.
  4. Chill the salad
    Cover the salad and refrigerate for at least 15 minutes to allow the flavors to meld together and the salad to chill thoroughly.
  5. Serve and garnish
    Divide the cold ramen salad among four serving bowls. Garnish with sliced green onions, fresh cilantro, and a sprinkle of toasted sesame seeds before serving.
