
Soba Noodle Salad
Cold buckwheat noodles with fresh vegetables and zesty dressing

Cook the soba noodlesBring a large pot of water to a boil. Add the soba noodles and cook according to package instructions, usually 4-5 minutes. Do not overcook as they will become mushy.

Rinse and cool the noodlesDrain the noodles and immediately rinse under cold running water, gently rubbing them between your fingers to remove excess starch. Continue rinsing until the noodles are completely cold. Drain well.

Prepare the vegetablesWhile the noodles are cooking, prepare all your vegetables. Julienne the cucumber and carrot, slice the bell pepper into thin strips, slice the green onions, and chop the cilantro.

Make the dressingIn a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey or maple syrup, grated ginger, and minced garlic until well combined.

Assemble the saladIn a large bowl, combine the cooled soba noodles with all the prepared vegetables. Pour the dressing over the salad and toss gently to coat everything evenly.

Garnish and serveSprinkle the toasted sesame seeds and remaining cilantro over the salad. The salad can be served immediately or chilled for 30 minutes to allow flavors to meld together.
