  1. Prepare the broth
    In a large pot, combine dashi stock, soy sauce, mirin, sake, and sugar. Bring to a simmer over medium heat and cook for 5 minutes to allow flavors to meld. Keep warm on low heat while preparing other components.
  2. Cook the mushrooms
    In a small skillet, sauté the sliced shiitake mushrooms in a small amount of oil until softened and lightly browned, about 3-4 minutes. Set aside.
  3. Cook the soba noodles
    Bring a large pot of water to a boil. Add the soba noodles and cook according to package directions, usually 4-5 minutes. Drain and rinse well under cold water to remove excess starch and prevent sticking. Divide cooked noodles among four serving bowls.
  4. Prepare the eggs
    Bring a small pot of water to a boil. Gently lower eggs into the water and cook for exactly 6 minutes for soft-boiled eggs. Transfer to an ice bath immediately, then peel and cut in half when cool enough to handle.
  5. Assemble the soup
    Ladle the hot broth over the noodles in each bowl. Arrange the soft-boiled egg halves, sautéed mushrooms, grated daikon, green onions, and nori strips on top of each bowl.
  6. Serve immediately
    Serve the soup right away while hot. Provide additional soy sauce, shichimi togarashi (Japanese seven spice), or yuzu kosho (citrus chili paste) on the side for diners to adjust flavors to their preference.
