  1. Cook the udon noodles
    Bring a large pot of water to a boil. Add the udon noodles and cook according to package instructions, usually 8-10 minutes for dried or 2-3 minutes for fresh noodles. Stir occasionally to prevent sticking.
  2. Chill the noodles
    Drain the cooked noodles and immediately rinse under cold running water. Continue rinsing until the noodles are completely cold. This stops the cooking process and removes excess starch. Fill a bowl with ice water and place the noodles in it for 1-2 minutes for extra chilling.
  3. Prepare the dipping sauce
    In a small saucepan, combine dashi stock, soy sauce, mirin, sake (if using), and sugar. Bring to a simmer over medium heat. Once sugar has dissolved, remove from heat and let cool completely. Refrigerate until ready to serve.
  4. Prepare the garnishes
    Finely chop the green onions. Grate the fresh ginger. Cut the nori seaweed into thin strips. Place each garnish in separate small bowls for serving.
  5. Assemble individual serving bowls
    Drain the chilled noodles thoroughly and divide them among 4 serving plates or bowls. Pour the cold dipping sauce into small individual dipping bowls.
  6. Serve with garnishes
    Allow each person to garnish their dipping sauce with green onions, grated ginger, bonito flakes, wasabi (if using), and sesame seeds according to taste. Sprinkle nori strips over the noodles.
