Instructions

  1. Prepare the cucumbers
Wash and thinly slice the cucumbers (about 1/8 inch thick). If using regular cucumbers with thick skin, you may want to peel them first. For English cucumbers, peeling is optional.
  2. Prepare the onions
Thinly slice the red onion and place in a bowl of cold water for 5 minutes to reduce the sharpness. Drain well before using.
  3. Make the dressing
In a small bowl, whisk together the vinegar, lemon juice, olive oil, sugar, salt, pepper, and garlic powder until the sugar is dissolved.
  4. Combine the salad
In a large bowl, combine the sliced cucumbers, drained red onions, and fresh dill. If using cherry tomatoes, add them now.
  5. Dress and chill
Pour the dressing over the cucumber mixture and toss gently to coat evenly. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  6. Serve
Just before serving, gently toss the salad again. Using a slotted spoon, transfer to a serving dish, leaving excess liquid behind.
