  1. Prepare the dipping sauce
    If making homemade dipping sauce, combine soy sauce, mirin, sake, and water in a saucepan. Add the kombu and bring to a simmer over medium heat. Remove the kombu just before boiling. Add bonito flakes, simmer for 1 minute, then strain. Let cool completely in the refrigerator.
  2. Cook the somen noodles
    Bring a large pot of water to a boil. Add the somen noodles and cook according to package instructions, usually 2-3 minutes. Do not overcook as they become very soft quickly.
  3. Cool the noodles
    Drain the noodles in a colander and immediately rinse under cold running water, gently rubbing the noodles with your hands to remove excess starch. Then place the noodles in a bowl of ice water for 1-2 minutes to chill completely.
  4. Drain and portion
    Drain the noodles well and divide them among 4 serving plates or bowls. You can twist them into neat portions using chopsticks or tongs.
  5. Prepare the garnishes
    Place the chopped green onions, grated ginger, shredded daikon, and nori strips in small individual bowls to serve as condiments.
  6. Serve the dish
    Pour the chilled dipping sauce into individual small cups or bowls. Sprinkle toasted sesame seeds on top of the sauce. Each person can add their preferred garnishes to the dipping sauce and dip the noodles before eating.
