Instructions

  1. Cook the pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside in a large mixing bowl.
  2. Prepare the chicken
Season chicken breasts with olive oil, Italian seasoning, salt, and pepper. Heat a grill pan or skillet over medium-high heat. Cook chicken for 5-7 minutes per side until fully cooked and internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then slice into strips.
  3. Mix the salad base
In the large bowl with cooled pasta, add the chopped romaine lettuce, halved cherry tomatoes, and minced garlic. Toss gently to combine all ingredients evenly.
  4. Prepare the dressing
In a small bowl, combine the Caesar dressing with fresh lemon juice and half of the Parmesan cheese. Whisk until smooth and well incorporated.
  5. Assemble the salad
Add the sliced chicken to the pasta mixture. Pour the dressing over the salad and toss gently until everything is well coated. Add the croutons and toss once more, being careful not to break them.
  6. Serve and garnish
Transfer the salad to a serving platter or individual plates. Sprinkle with the remaining Parmesan cheese and additional cracked black pepper if desired. Serve immediately for the best texture and flavor.
