
Buffalo Chicken Pasta Salad

Cook the pastaBring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop the cooking process.

Prepare the chickenIn a medium bowl, toss the cooked, diced chicken with 1/4 cup of buffalo wing sauce until well coated. Set aside to marinate while preparing other ingredients.

Make the dressingIn a large bowl, whisk together the ranch dressing, sour cream, and remaining 1/4 cup of buffalo wing sauce until smooth and well combined.

Combine ingredientsAdd the cooled pasta to the bowl with the dressing. Add the buffalo chicken, celery, carrots, bell pepper, red onion, and cherry tomatoes. Toss gently until all ingredients are well coated with the dressing.

Add cheese and garnishFold in 3/4 of the crumbled blue cheese, reserving some for garnish. Sprinkle the top of the salad with the remaining blue cheese and chopped parsley.

Chill and serveCover and refrigerate for at least 1 hour before serving to allow the flavors to meld. Toss gently before serving, adding a splash of ranch dressing if the pasta seems dry.
