  1. Prepare the chicken
    In a medium bowl, toss the chicken strips with buffalo sauce, olive oil, garlic powder, and paprika until evenly coated. Let marinate for 5 minutes while you prepare the other ingredients.
  2. Cook the chicken
    Heat a large skillet over medium-high heat. Add the marinated chicken strips and cook for 6-8 minutes, turning occasionally, until the chicken is cooked through and slightly caramelized. Remove from heat and let rest for 2 minutes before slicing into smaller pieces if desired.
  3. Warm the tortillas
    Microwave the tortillas for 20-30 seconds or heat them briefly in a dry skillet until soft and pliable. This prevents them from cracking when rolling.
  4. Assemble the wraps
    Lay each tortilla flat on a clean work surface. Spread about 2 tablespoons of ranch or blue cheese dressing in the center of each tortilla. Top with equal portions of the cooked buffalo chicken.
  5. Add the vegetables
    Layer shredded lettuce, diced tomatoes, red onion, and shredded cheese on top of the chicken. Sprinkle with fresh cilantro if using.
  6. Roll the wraps
    Fold the bottom edge of each tortilla up and over the filling, then fold in the sides and continue rolling tightly to form a wrap. If needed, secure with toothpicks.
  7. Serve
    Cut each wrap in half diagonally and serve immediately with extra buffalo sauce and ranch dressing on the side for dipping.
