Top with shredded Mexican cheese, crumbled blue cheese, diced celery, and red onion. Drizzle with a little ranch or blue cheese dressing and sprinkle with cilantro if using.

Fold and prepare for cookingFold the empty half of each tortilla over the filling, creating a half-moon shape. Press down gently to help seal the edges and keep the filling in place during cooking.
