  1. Prepare the buffalo chicken
    In a medium bowl, combine the shredded chicken with the buffalo sauce and melted butter. Stir well until the chicken is evenly coated with the sauce mixture.
  2. Assemble the quesadillas
    Lay out the tortillas on a clean work surface. Spread half of each tortilla with 1/4 of the buffalo chicken mixture. Top with shredded Mexican cheese, crumbled blue cheese, diced celery, and red onion. Drizzle with a little ranch or blue cheese dressing and sprinkle with cilantro if using.
  3. Fold and prepare for cooking
    Fold the empty half of each tortilla over the filling, creating a half-moon shape. Press down gently to help seal the edges and keep the filling in place during cooking.
  4. Cook the quesadillas
    Heat a large skillet over medium heat and add 1/2 tablespoon of oil. Once hot, carefully place one quesadilla in the pan and cook for 2-3 minutes per side until golden brown and crispy, and the cheese is melted. Repeat with the remaining quesadillas, adding more oil as needed.
  5. Serve hot
    Transfer each quesadilla to a cutting board and let rest for 1 minute. Cut into wedges using a pizza cutter or sharp knife. Serve immediately with additional ranch or blue cheese dressing for dipping, celery sticks, and carrot sticks if desired.
