
Buffalo Chicken Pasta
Creamy, spicy pasta dish with tender chicken and blue cheese

Cook the pastaBring a large pot of salted water to a boil. Add penne pasta and cook according to package directions until al dente, about 10-12 minutes. Drain and set aside, reserving ½ cup of pasta water.

Prepare the chickenWhile pasta is cooking, heat olive oil in a large skillet over medium-high heat. Season chicken pieces with garlic powder, onion powder, salt, and pepper. Add to the skillet and cook for 6-8 minutes, stirring occasionally, until chicken is cooked through and slightly browned on the outside.

Make the buffalo sauceReduce heat to medium-low and add the buffalo wing sauce to the skillet with the chicken. Stir to coat the chicken pieces completely and simmer for 2 minutes to allow the flavors to meld together.

Create the creamy saucePour in the heavy cream and add the butter. Stir continuously as the sauce comes to a gentle simmer. Add ¾ cup of the blue cheese and all of the Parmesan cheese. Continue stirring until the cheese melts and the sauce thickens slightly, about 3-4 minutes. If the sauce becomes too thick, add some of the reserved pasta water to adjust the consistency.

Combine pasta and sauceAdd the cooked pasta to the skillet with the sauce, tossing gently to coat each piece of pasta. Allow the pasta to simmer in the sauce for 1-2 minutes to absorb the flavors.

Serve and garnishTransfer the buffalo chicken pasta to a large serving dish or individual plates. Sprinkle with the remaining blue cheese crumbles, chopped green onions, and fresh parsley. Serve immediately while hot.
