Prepare the PastaBring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente, usually 8-10 minutes. Reserve 1/2 cup of pasta water before draining. Drain the pasta and set aside.

Cook the ChickenWhile the pasta is cooking, season chicken strips with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes until golden brown and cooked through (internal temperature of 165°F/74°C). Remove from the skillet and set aside.

Prepare the Alfredo SauceIn the same skillet, reduce heat to medium and add butter. Once melted, add minced garlic and sauté for 1 minute until fragrant, being careful not to burn it. Pour in the heavy cream and bring to a gentle simmer. Cook for 3-4 minutes, stirring occasionally, until it begins to thicken slightly.

Add the CheeseGradually whisk in the grated Parmesan cheese until melted and smooth. Add salt, pepper, and nutmeg. If the sauce seems too thick, add a splash of the reserved pasta water to reach your desired consistency.

Combine EverythingReturn the cooked chicken to the skillet with the sauce. Add the drained fettuccine and toss everything together until the pasta is well coated with sauce and the chicken is distributed throughout. If needed, add more reserved pasta water to loosen the sauce.

Serve and GarnishTransfer the Chicken Fettuccine Alfredo to a serving platter or individual plates. Garnish with chopped parsley and additional grated Parmesan cheese. Serve immediately while hot.
