Marinate the chickenPlace chicken breasts in a shallow dish and pour buttermilk over them. Cover and refrigerate for at least 1 hour or up to overnight for best results.

Prepare the coatingIn a large bowl, combine flour, garlic powder, paprika, salt, and pepper. Mix well to ensure even distribution of spices.

Dredge and fry the chickenRemove chicken from buttermilk, allowing excess to drip off. Dredge in the flour mixture, pressing firmly to coat well. Heat oil in a large skillet over medium-high heat. Cook chicken for 5-6 minutes per side until golden brown and internal temperature reaches 165°F (74°C).

Make the buffalo sauceWhile chicken is cooking, combine buffalo sauce and melted butter in a bowl. Whisk until smooth and well incorporated.

Coat the chickenOnce chicken is cooked, brush or dip each piece generously with the buffalo sauce mixture, ensuring it's well coated on all sides.

Toast the bunsLightly butter the inside of each brioche bun and toast in a clean skillet or under the broiler until golden brown, about 1-2 minutes.

Assemble the sandwichesSpread blue cheese dressing on the bottom half of each toasted bun. Layer with lettuce, tomato slice, and red onion. Place a buffalo-coated chicken breast on top, add another drizzle of buffalo sauce if desired, and cover with the top bun.

Serve immediatelyCut sandwiches in half if desired and serve while hot with extra buffalo sauce and blue cheese dressing on the side. Pair with celery sticks, carrot sticks, or french fries for a complete meal.
