
Lemon Garlic Chicken Pasta

Cook the pastaBring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually 8-10 minutes. Reserve 1 cup of pasta water before draining.

Prepare the chickenWhile the pasta cooks, season chicken pieces with salt and pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 6-7 minutes. Transfer to a plate and set aside.

Make the sauceIn the same skillet, add the remaining tablespoon of olive oil. Add minced garlic, dried oregano, and red pepper flakes (if using). Sauté for 30 seconds until fragrant. Pour in the lemon juice and scrape up any browned bits from the bottom of the pan.

Create the creamy baseReduce heat to medium-low and add the heavy cream. Bring to a gentle simmer and cook for 2 minutes. Stir in the butter until melted and incorporated.

Combine everythingAdd the cooked chicken back to the skillet. Stir in the drained pasta, lemon zest, and Parmesan cheese. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency. Toss everything together until well coated.

Finish and serveRemove from heat and stir in the chopped parsley. Taste and adjust seasoning with salt and pepper as needed. Serve immediately in warm bowls with additional Parmesan cheese on top.
