Crisp romaine with creamy garlic dressing and crunchy croutons
Ingredients
Instructions
-
Prepare the croutonsPreheat oven to 375°F (190°C). Toss bread cubes with melted butter and spread in a single layer on a baking sheet. Bake for 10 minutes, turning once, until golden brown and crisp. Set aside to cool.
-
Make the dressingIn a medium bowl, whisk together the minced garlic, anchovy fillets, Dijon mustard, coddled eggs, Worcestershire sauce, and lemon juice until well combined. Slowly drizzle in the olive oil while whisking continuously to emulsify. Stir in 1/4 cup of the Parmesan cheese and black pepper.
-
Assemble the saladPlace the romaine lettuce in a large salad bowl. Pour half of the dressing over the lettuce and toss gently to coat the leaves evenly. Add more dressing as needed, being careful not to overdress the salad.
-
Add finishing touchesAdd the croutons to the dressed lettuce and toss lightly. Sprinkle the remaining Parmesan cheese over the top. Serve immediately on chilled plates with extra Parmesan on the side if desired.
-
Optional presentationFor a more dramatic presentation, arrange whole romaine leaves on plates, drizzle with dressing, and top with croutons and Parmesan. Alternatively, you can serve the salad in the traditional style by preparing it tableside in a wooden bowl.
