  1. Prepare the apples
    In a large bowl, toss the diced apples with lemon juice to prevent browning. The acid in the lemon will help maintain the apples' fresh color and add a subtle brightness to the salad.
  2. Combine fruits and vegetables
    Add the sliced celery and halved grapes to the bowl with the apples. Mix gently to combine while maintaining the integrity of each ingredient.
  3. Toast the walnuts
    In a dry skillet over medium heat, toast the walnuts for 3-5 minutes until fragrant and lightly golden, stirring occasionally to prevent burning. Allow to cool slightly, then coarsely chop and add to the fruit mixture.
  4. Make the dressing
    In a separate small bowl, whisk together the mayonnaise, Greek yogurt, honey, salt, and pepper until smooth and well combined.
  5. Dress the salad
    Pour the dressing over the fruit and nut mixture. Gently fold everything together until all ingredients are evenly coated with the dressing.
  6. Chill and serve
    Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld. When ready to serve, arrange mixed greens on plates if using, top with the Waldorf salad, and garnish with chopped fresh parsley.
