  1. Prepare the grill
    Preheat your grill to medium-high heat (about 400°F). Clean and oil the grates to prevent sticking.
  2. Make the dressing
    In a small bowl, whisk together 2 tablespoons olive oil, minced garlic, chopped anchovies (if using), Dijon mustard, lemon juice, Worcestershire sauce, and ¼ cup Parmesan cheese until well combined. Season with salt and pepper to taste.
  3. Prepare the romaine
    Brush the cut sides of the romaine hearts with the remaining tablespoon of olive oil. Season lightly with salt and pepper.
  4. Make the croutons
    Toss bread cubes with 1 tablespoon olive oil, a pinch of salt, and a little garlic powder if desired. Toast in a dry skillet over medium heat until golden and crisp, about 5 minutes, tossing frequently. Set aside.
  5. Grill the romaine
    Place the romaine hearts cut-side down on the preheated grill. Cook for 1-2 minutes until grill marks appear and the lettuce is slightly charred but still crisp. Don't overcook or the lettuce will wilt too much.
  6. Assemble the salad
    Transfer the grilled romaine hearts to a serving platter, charred side up. Drizzle with the Caesar dressing, making sure to get some into the layers of the lettuce leaves. Sprinkle with the remaining Parmesan cheese and the homemade croutons.
