Instructions

  1. Cook the pasta
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, usually 8-10 minutes. Drain and rinse under cold water to stop the cooking process, then set aside to cool completely.
  2. Prepare the chicken
Season chicken breasts with salt and pepper. Grill over medium-high heat for 5-6 minutes per side until the internal temperature reaches 165°F (74°C). Let cool for 5 minutes, then dice into bite-sized pieces.
  3. Make the dressing mixture
In a small bowl, whisk together the Caesar dressing, minced garlic, lemon juice, Dijon mustard, and black pepper until well combined. This enhances the flavor of store-bought dressing.
  4. Combine ingredients
In a large serving bowl, combine the cooled pasta, diced chicken, chopped romaine, cherry tomatoes, red onion, and half of the Parmesan cheese. Toss gently to combine.
  5. Add dressing and toss
Pour the dressing mixture over the salad and toss gently until all ingredients are evenly coated. Make sure the pasta is well dressed as it tends to absorb the dressing.
  6. Final touches
Add the croutons and remaining Parmesan cheese on top. For best flavor, let the salad sit in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
