
Vegetable Ramen
Hearty Japanese noodle soup packed with fresh vegetables

Prepare the broth baseIn a large pot, heat sesame oil over medium heat. Add the white parts of green onions, garlic, and ginger. Sauté for 1-2 minutes until fragrant. Add vegetable broth and bring to a simmer.

Flavor the brothLadle about 1 cup of hot broth into a bowl and whisk in the miso paste until smooth. Return the mixture to the pot and add soy sauce. Simmer gently for 5 minutes to allow flavors to meld.

Cook the vegetablesAdd shiitake mushrooms and carrots to the simmering broth and cook for 3 minutes. Add snow peas and bok choy, and simmer for another 2 minutes until vegetables are tender-crisp.

Prepare the noodlesWhile the vegetables are cooking, prepare the ramen noodles according to package instructions in a separate pot. Drain well and divide among four serving bowls.

Assemble the ramen bowlsLadle the hot broth and vegetables over the noodles in each bowl. Top each serving with half a soft-boiled egg (if using), green parts of the green onions, nori strips, and a sprinkle of toasted sesame seeds.

Adjust seasoningTaste the broth and adjust seasoning if needed by adding more soy sauce or miso to taste. Serve immediately while hot.
