  1. Prepare the broth base
    In a large pot, heat sesame oil over medium heat. Add the white parts of green onions, garlic, and ginger. Sauté for 1-2 minutes until fragrant. Add vegetable broth and bring to a simmer.
  2. Flavor the broth
    Ladle about 1 cup of hot broth into a bowl and whisk in the miso paste until smooth. Return the mixture to the pot and add soy sauce. Simmer gently for 5 minutes to allow flavors to meld.
  3. Cook the vegetables
    Add shiitake mushrooms and carrots to the simmering broth and cook for 3 minutes. Add snow peas and bok choy, and simmer for another 2 minutes until vegetables are tender-crisp.
  4. Prepare the noodles
    While the vegetables are cooking, prepare the ramen noodles according to package instructions in a separate pot. Drain well and divide among four serving bowls.
  5. Assemble the ramen bowls
    Ladle the hot broth and vegetables over the noodles in each bowl. Top each serving with half a soft-boiled egg (if using), green parts of the green onions, nori strips, and a sprinkle of toasted sesame seeds.
  6. Adjust seasoning
    Taste the broth and adjust seasoning if needed by adding more soy sauce or miso to taste. Serve immediately while hot.
