  1. Prepare the rice
    If using a stone bowl (dolsot), heat it over medium-high heat. Brush the inside with 1 tablespoon of sesame oil and add the hot rice, pressing it against the sides. If using regular bowls, simply portion the hot rice into 4 serving bowls.
  2. Cook the vegetables
    Heat 1 tablespoon of sesame oil in a large skillet over medium heat. Sauté each vegetable separately: spinach for 1-2 minutes until wilted, bean sprouts for 2-3 minutes until tender, zucchini for 2-3 minutes until softened, carrots for 3-4 minutes until crisp-tender, and mushrooms for 3-4 minutes until browned. Season each vegetable lightly with salt as you cook.
  3. Prepare the sauce
    In a small bowl, mix together the gochujang, soy sauce, honey, 1 tablespoon of sesame oil, and 1 tablespoon of water. Stir until smooth. Adjust spiciness to taste by adding more gochujang or diluting with water.
  4. Fry the eggs
    Heat the remaining tablespoon of sesame oil in a non-stick skillet over medium heat. Crack the eggs into the pan and fry until the whites are set but the yolks are still runny, about 2-3 minutes. For a more traditional presentation, keep the yolk intact.
  5. Assemble the bibimbap
    Arrange the cooked vegetables in separate sections on top of the rice, creating a colorful presentation. Place a fried egg in the center of each bowl. Sprinkle with toasted sesame seeds and green onions.
  6. Serve and mix
    Serve the bibimbap immediately with the gochujang sauce on the side. Traditionally, diners mix all the ingredients together thoroughly before eating, incorporating the sauce to taste. If using stone bowls, the rice will develop a delicious crispy crust on the bottom.
