Prepare the ingredientsDrain the soaked shiitake mushrooms, squeeze out excess water, and slice them. Prepare all other vegetables and tofu according to the ingredient list. Mix the soy sauce, vegetarian oyster sauce, and sesame oil in a small bowl to create the sauce.

Stir-fry aromaticsHeat the vegetable oil in a large wok or deep skillet over medium-high heat. Add the garlic and ginger, and stir-fry for 30 seconds until fragrant but not browned.

Cook the firm ingredientsAdd the tofu, bean curd sticks, and shiitake mushrooms to the wok. Stir-fry for 3-4 minutes until they begin to take on some color and absorb the flavors of the aromatics.

Add the vegetablesAdd the bamboo shoots, lotus root, and carrots to the wok. Stir-fry for 2 minutes. Then add the napa cabbage and snow peas. Continue stir-frying for another 2 minutes until the vegetables begin to soften but remain crisp.

Add the liquidPour the vegetable broth into the wok and bring to a simmer. Allow the mixture to cook for 5 minutes, letting the flavors meld together and the vegetables to cook through.

Season the dishPour the prepared sauce mixture over the vegetables and gently toss to coat everything evenly. Simmer for 2-3 more minutes until the sauce has slightly thickened and all ingredients are tender but still have some bite.
