Cook the soba noodlesBring a large pot of water to a boil. Add the soba noodles and cook according to package instructions, usually 4-5 minutes. Drain immediately and rinse under cold running water to stop the cooking process and remove excess starch. Drain well.

Prepare the dressingIn a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey or maple syrup, and grated ginger until well combined. Set aside.

Prepare the vegetablesJulienne or thinly slice the cucumber, carrot, and bell pepper. Shred the napa cabbage and slice the green onions. Arrange all vegetables on a plate or in individual preparation bowls.

Assemble the noodle bowlsDivide the cooled soba noodles among four serving bowls. Arrange the sliced vegetables, cabbage, and avocado on top of the noodles. Drizzle each bowl with the prepared dressing.

Add finishing touchesSprinkle each bowl with green onions, toasted sesame seeds, and nori strips if using. Serve immediately, or chill in the refrigerator for 30 minutes for a more refreshing cold noodle dish.
