
Sesame Ginger Noodle Salad

Cook the noodlesBring a large pot of water to a boil. Cook the noodles according to package instructions until al dente, usually 4-5 minutes. Drain and rinse under cold water to stop the cooking process and prevent sticking.

Make the dressingIn a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey, grated ginger, and minced garlic until well combined. Taste and adjust seasoning if needed.

Prepare the vegetablesWhile the noodles are cooking, prepare all the vegetables. Thinly slice the bell pepper, julienne the carrot and cucumber, slice the green onions, and measure out the edamame.

Combine and tossIn a large bowl, combine the cooled noodles with the prepared vegetables. Pour the dressing over the noodle mixture and toss thoroughly to ensure everything is well coated.

Chill and serveCover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Before serving, sprinkle with toasted sesame seeds and chopped cilantro if using. Toss once more and serve cold.
