  1. Cook the noodles
    Bring a large pot of water to a boil. Cook the noodles according to package instructions until al dente, usually 4-5 minutes. Drain and rinse under cold water to stop the cooking process and prevent sticking.
  2. Make the dressing
    In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey, grated ginger, and minced garlic until well combined. Taste and adjust seasoning if needed.
  3. Prepare the vegetables
    While the noodles are cooking, prepare all the vegetables. Thinly slice the bell pepper, julienne the carrot and cucumber, slice the green onions, and measure out the edamame.
  4. Combine and toss
    In a large bowl, combine the cooled noodles with the prepared vegetables. Pour the dressing over the noodle mixture and toss thoroughly to ensure everything is well coated.
  5. Chill and serve
    Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Before serving, sprinkle with toasted sesame seeds and chopped cilantro if using. Toss once more and serve cold.
