
Spicy Korean Noodles

Cook the noodlesBring a large pot of water to boil. Add the noodles and cook according to package instructions, usually 3-4 minutes. Drain and rinse under cold water until completely cooled. Drain well and set aside.

Prepare the sauceIn a mixing bowl, combine the gochujang, rice vinegar, soy sauce, sesame oil, sugar, and minced garlic. Whisk until smooth and the sugar is dissolved. Taste and adjust seasoning if needed.

Prepare the vegetablesJulienne the cucumber and carrot into thin strips about 2 inches long. Slice the green onions diagonally. Set all vegetables aside.

Assemble the noodlesPlace the cooled noodles in a large mixing bowl. Add about 3/4 of the sauce and toss to coat the noodles evenly. Reserve the remaining sauce for serving.

Plate and garnishDivide the noodles among serving bowls. Arrange the julienned cucumber, carrot, and sliced green onions on top. Add halved hard-boiled eggs if using. Drizzle with the remaining sauce and sprinkle with toasted sesame seeds.

Serve immediatelyServe the noodles immediately at room temperature or chilled. Before eating, toss everything together to mix the vegetables and sauce with the noodles for the full flavor experience.
