
Korean Cold Noodle Soup

Prepare the brothIn a large pot, combine the beef brisket, onion, garlic, ginger, and water. Bring to a boil, then reduce heat and simmer for 1 hour until the beef is tender. Remove the beef, strain the broth, and chill in the refrigerator for at least 2 hours or overnight.

Cook the noodlesBring a large pot of water to a boil. Add the buckwheat noodles and cook according to package instructions, usually 3-5 minutes until al dente. Drain immediately and rinse under cold running water to stop the cooking process and remove excess starch. Drain well and set aside.

Prepare the toppingsSlice the cooled beef brisket thinly. Julienne the cucumber and slice the Korean pears thinly. Prepare the hard-boiled eggs by cutting them in half. Arrange these toppings on a plate for easy assembly.

Season the brothAdd rice vinegar and sugar to the chilled beef broth. Stir well to dissolve the sugar. Taste and adjust seasoning if necessary. The broth should be slightly tangy, sweet, and savory.

Assemble the soupPlace a portion of noodles in each serving bowl. Pour the chilled broth over the noodles. Top with sliced beef, cucumber, pear slices, and half a hard-boiled egg. Serve with a small dollop of Korean mustard paste on the side.

Final touchJust before serving, drizzle each bowl with a little toasted sesame oil. Serve immediately with scissors for cutting the noodles (a traditional Korean practice) and additional mustard paste on the side for those who enjoy extra spice.
