  1. Cook the noodles
    Bring a large pot of water to a boil. Add the noodles and cook according to package directions until al dente, usually 4-5 minutes for Chinese egg noodles or 8-10 minutes for spaghetti. Drain and rinse under cold water to stop the cooking process.
  2. Prepare the peanut sauce
    In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, brown sugar, minced garlic, grated ginger, and sriracha. Add warm water, one tablespoon at a time, until the sauce reaches a smooth, pourable consistency.
  3. Combine noodles and sauce
    Transfer the cooled noodles to a large mixing bowl. Pour the peanut sauce over the noodles and toss thoroughly until all noodles are evenly coated. If the sauce is too thick, add a splash more warm water.
  4. Prepare the vegetables
    Julienne the cucumber and carrot into thin matchstick pieces. Slice the green onions thinly on a diagonal. Roughly chop the roasted peanuts.
  5. Assemble the dish
    Divide the dressed noodles among serving bowls. Top with julienned cucumber, carrot, sliced green onions, and chopped peanuts. For a more colorful presentation, arrange the vegetables in separate piles on top of the noodles.
  6. Final touches
    Drizzle with additional sesame oil or chili oil if desired. The dish can be served immediately at room temperature or chilled for 30 minutes for a refreshing cold noodle dish.
