  1. Cook the noodles
    Bring a large pot of water to a boil. Cook the noodles according to package instructions until al dente, usually 4-5 minutes. Drain and rinse under cold water to stop the cooking process.
  2. Prepare the sesame sauce
    In a medium bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, tahini, and chili oil (if using) until smooth and well combined. Set aside.
  3. Prepare the vegetables
    Julienne the cucumber and carrot, thinly slice the bell pepper, and chop the green onions and cilantro. Place all prepared vegetables in a large mixing bowl.
  4. Combine and toss
    Add the cooled noodles to the bowl with the vegetables. Pour the sesame sauce over the noodles and vegetables, then toss everything together until well coated with the dressing.
  5. Chill the salad
    Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together. The salad can be made up to 24 hours in advance.
  6. Serve and garnish
    Just before serving, give the salad another good toss. Transfer to a serving platter or individual bowls and sprinkle with toasted sesame seeds and additional green onions if desired.
