  1. Cook the noodles
    Bring a large pot of water to a boil. Cook the rice noodles or spaghetti according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. Prepare the peanut sauce
    In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, brown sugar, minced garlic, sriracha, lime juice, and warm water until smooth. If the sauce is too thick, add more warm water, one tablespoon at a time, until you reach the desired consistency.
  3. Mix the noodles and sauce
    In a large bowl, toss the cooked noodles with the peanut sauce until the noodles are evenly coated. Make sure to separate any clumps of noodles to ensure the sauce is distributed throughout.
  4. Add the vegetables
    Add the sliced red bell pepper and most of the green onions (reserve some for garnish) to the noodles. Toss again to combine everything thoroughly.
  5. Garnish and serve
    Transfer the noodles to serving plates or bowls. Garnish with the remaining green onions, chopped cilantro, and crushed peanuts. Serve immediately for a warm dish, or refrigerate for at least 30 minutes for a refreshing cold noodle dish.
