  1. Prepare the noodles
    Cook the udon or soba noodles according to package instructions until al dente. Drain, rinse under cold water to stop the cooking process, and set aside. Toss with a small amount of oil to prevent sticking.
  2. Cook the chicken
    Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the chicken pieces and cook for 5-6 minutes until golden brown and cooked through. Remove from the pan and set aside.
  3. Stir-fry the vegetables
    In the same pan, add the remaining tablespoon of oil. Add the white parts of the green onions, garlic, and ginger, and stir-fry for 30 seconds until fragrant. Add the bell pepper, carrots, and broccoli. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
  4. Prepare the sauce
    In a small bowl, whisk together the teriyaki sauce, soy sauce, and honey until well combined.
  5. Combine everything
    Return the cooked chicken to the pan with the vegetables. Add the cooked noodles and pour the teriyaki sauce mixture over everything. Toss well to coat all ingredients with the sauce and continue to cook for 2-3 minutes until everything is heated through and the sauce has slightly thickened.
  6. Finish and serve
    Remove from heat and drizzle with sesame oil. Garnish with the green parts of the green onions and sesame seeds. Serve hot in bowls, with additional teriyaki sauce on the side if desired.
