Prepare the sauceIn a small bowl, mix together dashi stock, soy sauce, mirin, and sugar until the sugar is completely dissolved. Set aside.

Cook the chicken and onionsHeat vegetable oil in a large skillet over medium heat. Add sliced onions and cook for 2-3 minutes until they begin to soften. Add chicken pieces and grated ginger, and cook until the chicken is no longer pink, about 5-6 minutes.

Add the saucePour the prepared sauce over the chicken and onions. Bring to a simmer and cook for about 5 minutes, allowing the flavors to meld and the sauce to slightly reduce.

Add the eggsPour the beaten eggs evenly over the chicken mixture. Cover the skillet with a lid and reduce heat to low. Cook for 2-3 minutes until the eggs are just set but still slightly runny on top.

Serve over ricePlace a generous portion of hot cooked rice in each serving bowl. Spoon the chicken and egg mixture over the rice, making sure to include some of the flavorful sauce.

Garnish and serveSprinkle sliced green onions and strips of nori over each bowl. Serve immediately while hot.
