Prepare the yakitori sauceIn a small saucepan, combine soy sauce, mirin, sake, brown sugar, garlic, and ginger. Bring to a simmer over medium heat and cook for about 10 minutes, or until the sauce has reduced and thickened slightly. Remove from heat and divide into two portions - one for basting and one for serving.

Prepare the chicken skewersThread the chicken pieces onto the soaked wooden skewers, alternating with green onion pieces. Each skewer should hold about 4-5 pieces of chicken and 3-4 pieces of green onion.

Preheat the grillPreheat your grill or broiler to medium-high heat. If using a grill, oil the grates to prevent sticking. If using a broiler, line a baking sheet with foil and place a wire rack on top.

Grill the yakitoriBrush the chicken skewers with vegetable oil and place them on the preheated grill or under the broiler. Cook for about 3-4 minutes on each side, turning occasionally.

Baste and finish cookingAfter the initial searing, begin brushing the skewers with the yakitori sauce. Continue to grill for another 5-7 minutes, turning and basting frequently, until the chicken is cooked through and has a glossy glaze.

Serve the yakitoriTransfer the skewers to a serving plate. Drizzle with sesame oil, sprinkle with toasted sesame seeds, and serve with the reserved yakitori sauce for dipping.
