  1. Prepare the yakitori sauce
    In a small saucepan, combine soy sauce, mirin, sake, brown sugar, garlic, and ginger. Bring to a simmer over medium heat and cook for about 10 minutes, or until the sauce has reduced and thickened slightly. Remove from heat and divide into two portions - one for basting and one for serving.
  2. Prepare the chicken skewers
    Thread the chicken pieces onto the soaked wooden skewers, alternating with green onion pieces. Each skewer should hold about 4-5 pieces of chicken and 3-4 pieces of green onion.
  3. Preheat the grill
    Preheat your grill or broiler to medium-high heat. If using a grill, oil the grates to prevent sticking. If using a broiler, line a baking sheet with foil and place a wire rack on top.
  4. Grill the yakitori
    Brush the chicken skewers with vegetable oil and place them on the preheated grill or under the broiler. Cook for about 3-4 minutes on each side, turning occasionally.
  5. Baste and finish cooking
    After the initial searing, begin brushing the skewers with the yakitori sauce. Continue to grill for another 5-7 minutes, turning and basting frequently, until the chicken is cooked through and has a glossy glaze.
  6. Serve the yakitori
    Transfer the skewers to a serving plate. Drizzle with sesame oil, sprinkle with toasted sesame seeds, and serve with the reserved yakitori sauce for dipping.
