
Beef Satay
Tender marinated beef skewers with spicy peanut sauce

Prepare the marinadeIn a large bowl, combine soy sauce, brown sugar, 1 tablespoon vegetable oil, minced garlic, ground coriander, turmeric, and cumin. Mix well until the sugar dissolves completely.

Marinate the beefAdd the beef strips to the marinade, making sure each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably 4 hours or overnight for the best flavor.

Make the peanut sauceIn a medium saucepan over medium heat, combine peanut butter, coconut milk, lime juice, fish sauce, remaining 1 tablespoon of oil, and chopped chilies. Stir continuously until the mixture is smooth and slightly thickened, about 5-7 minutes. If the sauce is too thick, add a splash of water. Set aside.

Prepare the skewersThread the marinated beef strips onto the pre-soaked wooden skewers, weaving the meat back and forth in an S-shape. Place the prepared skewers on a plate, ready for grilling.

Grill the satayPreheat a grill or grill pan to medium-high heat. Lightly oil the grates. Grill the skewers for 2-3 minutes per side, or until the beef is cooked through with nice char marks but still tender.

ServeArrange the grilled beef satay on a serving platter. Drizzle with some peanut sauce and serve the remaining sauce on the side for dipping. Garnish with lime wedges if desired.
