
Lamb Satay
Tender marinated lamb skewers with peanut dipping sauce

Prepare the marinadeIn a large bowl, combine soy sauce, brown sugar, 1 tablespoon oil, minced garlic, grated ginger, ground coriander, turmeric, and cumin. Mix well to form a paste.

Marinate the lambAdd the lamb cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 2 hours, preferably overnight, to allow flavors to penetrate the meat.

Make the peanut sauceIn a medium saucepan over medium heat, combine peanut butter, coconut milk, remaining oil, lime juice, fish sauce, and chopped chilies. Stir continuously until the sauce is smooth and slightly thickened, about 5 minutes. If too thick, add a tablespoon of water at a time until desired consistency is reached.

Prepare the skewersThread the marinated lamb pieces onto the pre-soaked wooden skewers, placing 4-5 pieces on each skewer. Leave a small space between pieces to ensure even cooking.

Grill the satayPreheat grill to medium-high heat. Grill the skewers for 3-4 minutes per side, or until lamb is cooked through but still tender (medium doneness). If using a grill pan indoors, cook in batches to avoid overcrowding.

Rest and serveAllow the skewers to rest for 5 minutes before serving. Arrange on a platter and serve hot with the peanut dipping sauce on the side.
