  1. Cook the udon noodles
    Bring a large pot of water to a boil. Add the udon noodles and cook according to package instructions (usually 6-8 minutes). Stir occasionally to prevent sticking.
  2. Rinse and chill the noodles
    Drain the noodles in a colander and immediately rinse under cold running water to stop the cooking process. Continue rinsing until the noodles are completely cooled. Gently shake off excess water and set aside.
  3. Prepare the dipping sauce
    In a medium saucepan, combine the dashi stock, soy sauce, mirin, rice vinegar, and sugar. Bring to a simmer over medium heat. Stir until the sugar dissolves completely, then remove from heat and let cool. Refrigerate until chilled.
  4. Prepare the garnishes
    Slice the green onions thinly at an angle. Cut the nori sheets into thin strips. Julienne the cucumber. Arrange all garnishes on a small plate.
  5. Serve the noodles
    Divide the chilled udon noodles among four bowls or plates. Pour the dipping sauce into individual small bowls for each person. Alternatively, you can pour some of the sauce directly over the noodles.
  6. Garnish and enjoy
    Invite diners to top their noodles with green onions, nori strips, cucumber, a sprinkle of sesame seeds, and a touch of wasabi if desired. The grated ginger can be added to individual bowls of dipping sauce for extra flavor.
