  1. Prepare the broth
    In a medium saucepan, combine dashi stock, soy sauce, mirin, and sugar. Bring to a simmer over medium heat, stirring occasionally until sugar dissolves. Remove from heat and set aside.
  2. Cook the soba noodles
    Bring a large pot of water to a boil. Add soba noodles and cook according to package instructions, usually 4-5 minutes. Do not overcook as noodles should remain slightly firm.
  3. Drain and rinse the noodles
    Drain the noodles in a colander and rinse thoroughly under cold running water to remove excess starch and stop the cooking process. This step is crucial for achieving the proper texture.
  4. Assemble the dish
    Divide the cooled soba noodles between two serving bowls. Pour the warm broth over the noodles, ensuring they're mostly covered but not swimming in liquid.
  5. Add the toppings
    Sprinkle the tenkasu (tempura flakes) generously over each bowl. Add sliced green onions, nori strips, and toasted sesame seeds. If desired, add a small dab of wasabi on the side of each bowl.
  6. Serve immediately
    Tanuki Soba is best enjoyed while the broth is still warm and the tempura flakes are crispy. Serve with chopsticks and a soup spoon for the broth.
