Cook the noodlesBring a large pot of water to a boil. Cook the noodles according to package instructions until al dente, usually 4-5 minutes. Drain immediately and rinse under cold running water until completely chilled. Drain well and set aside.

Prepare the sauceIn a bowl, combine the ground Sichuan peppercorns, chili oil, black vinegar, soy sauce, sesame oil, minced garlic, ginger, tahini, and sugar. Whisk until smooth and well incorporated. Taste and adjust seasonings if needed.

Prepare the vegetablesJulienne the cucumber into thin strips. Slice the green onions thinly, separating the white and green parts. Roughly chop the roasted peanuts. Set all aside for assembling.

Chill the ingredientsPlace the sauce and prepared noodles in the refrigerator for at least 15 minutes to ensure everything is properly chilled before serving.

Assemble the dishDivide the chilled noodles among four serving bowls. Drizzle the Sichuan sauce generously over the noodles. Arrange the julienned cucumber on top of each bowl.

Add the garnishesSprinkle each bowl with chopped peanuts, sliced green onions, and cilantro leaves. For an authentic presentation, arrange the garnishes in separate piles on top of the noodles.
