  1. Prepare the cucumbers
    Wash the cucumbers thoroughly. Using a rolling pin or the flat side of a cleaver, gently smack the cucumbers until they split slightly. Cut them into bite-sized pieces, about 1/2 inch thick, and place in a colander.
  2. Salt the cucumbers
    Sprinkle salt over the cucumber pieces and mix well. Let them sit for 10-15 minutes to draw out excess moisture. This will help the cucumbers absorb the dressing better.
  3. Make the dressing
    In a bowl, combine the minced garlic, rice vinegar, soy sauce, sesame oil, chili oil, sugar, and ground Sichuan peppercorns (if using). Stir well until the sugar is dissolved.
  4. Dry and dress the cucumbers
    Pat the cucumber pieces dry with paper towels to remove excess moisture and salt. Transfer to a serving bowl, then pour the prepared dressing over them.
  5. Garnish and serve
    Toss the cucumbers with the dressing until well coated. Sprinkle with toasted sesame seeds and sliced green onions. For best flavor, let the salad marinate for at least 5 minutes before serving.
