Spicy Cucumber Salad
Refreshing cucumber slices with a spicy-tangy dressing
Ingredients
Instructions
-
Prepare the cucumbersWash the cucumbers thoroughly. Using a rolling pin or the flat side of a cleaver, gently smack the cucumbers until they split slightly. Cut them into bite-sized pieces, about 1/2 inch thick, and place in a colander.
-
Salt the cucumbersSprinkle salt over the cucumber pieces and mix well. Let them sit for 10-15 minutes to draw out excess moisture. This will help the cucumbers absorb the dressing better.
-
Make the dressingIn a bowl, combine the minced garlic, rice vinegar, soy sauce, sesame oil, chili oil, sugar, and ground Sichuan peppercorns (if using). Stir well until the sugar is dissolved.
-
Dry and dress the cucumbersPat the cucumber pieces dry with paper towels to remove excess moisture and salt. Transfer to a serving bowl, then pour the prepared dressing over them.
-
Garnish and serveToss the cucumbers with the dressing until well coated. Sprinkle with toasted sesame seeds and sliced green onions. For best flavor, let the salad marinate for at least 5 minutes before serving.
