  1. Prepare the sauce
    In a medium bowl, combine the sesame paste with 2 tablespoons of warm water. Whisk until smooth. Add the light soy sauce, dark soy sauce, black vinegar, chili oil, sesame oil, minced garlic, sugar, and five-spice powder. Mix thoroughly until well combined.
  2. Cook the noodles
    Bring a large pot of water to a boil. Add the noodles and cook according to package instructions until al dente, usually 4-5 minutes. Stir occasionally to prevent sticking.
  3. Rinse and cool the noodles
    Drain the noodles and immediately rinse under cold water to stop the cooking process. Toss the noodles to remove excess water and to prevent them from sticking together.
  4. Mix noodles with sauce
    Transfer the noodles to a large mixing bowl. Pour the sauce over the noodles and toss thoroughly until all noodles are evenly coated with the sauce.
  5. Serve and garnish
    Divide the noodles among four serving bowls. Top with sliced green onions, pickled mustard greens (if using), and toasted sesame seeds. Serve immediately while still slightly warm or at room temperature.
