Prepare the chickenIn a large bowl, toss chicken pieces with beaten eggs until well coated. In a separate bowl, mix cornstarch, salt, and white pepper. Dredge the egg-coated chicken in the cornstarch mixture, ensuring all pieces are thoroughly coated. Set aside for 10 minutes to allow coating to adhere.

Make the sauceIn a medium bowl, whisk together soy sauce, rice vinegar, hoisin sauce, and brown sugar until well combined. Set aside.

Fry the chickenHeat 2 inches of vegetable oil in a wok or deep pan to 350°F (175°C). Working in batches, fry the chicken pieces for 3-4 minutes until golden and crispy. Remove with a slotted spoon and drain on paper towels. Keep warm.

Prepare the aromaticsIn a clean wok or large skillet, heat 2 tablespoons of oil over medium-high heat. Add minced garlic, grated ginger, and dried chili peppers. Stir-fry for 30 seconds until fragrant, being careful not to burn the garlic.

Finish the dishPour the sauce mixture into the wok with the aromatics and bring to a simmer. Cook for 1-2 minutes until the sauce slightly thickens. Add the fried chicken pieces and toss quickly to coat with the sauce, about 1 minute.
