Instructions

  1. Marinate the beef
In a medium bowl, combine half of the soy sauce with 1 tablespoon cornstarch. Add sliced beef and toss to coat evenly. Let marinate for at least 10 minutes while preparing other ingredients.
  2. Prepare the sauce
In a small bowl, whisk together beef broth, remaining soy sauce, oyster sauce, brown sugar, and sesame oil. Set aside.
  3. Blanch the broccoli
Bring a pot of water to boil. Add broccoli florets and cook for 2 minutes until bright green and just tender. Immediately drain and rinse with cold water to stop cooking. Set aside.
  4. Cook the beef
Heat 1 tablespoon vegetable oil in a large wok or skillet over high heat. Add beef in a single layer (working in batches if necessary) and cook for 2-3 minutes until browned but still slightly pink in the center. Remove beef to a plate.
  5. Stir-fry aromatics
Add remaining 1 tablespoon oil to the same pan. Add minced garlic, grated ginger, and red pepper flakes if using. Stir-fry for 30 seconds until fragrant.
  6. Combine and finish
Add blanched broccoli to the pan and stir-fry for 1 minute. Pour in the sauce mixture and bring to a simmer. Return beef to the pan, along with any accumulated juices. Stir to combine and cook for 2-3 minutes until sauce thickens and coats everything nicely.
