  1. Marinate the beef
    In a medium bowl, mix the beef slices with 1 tablespoon soy sauce and 1 tablespoon cornstarch. Toss to coat evenly and let marinate for at least 10 minutes while preparing other ingredients.
  2. Prepare the sauce
    In a small bowl, whisk together the remaining 2 tablespoons soy sauce, 1 tablespoon cornstarch, beef broth, oyster sauce, and honey until smooth. Set aside.
  3. Stir-fry the beef
    Heat 2 tablespoons of oil in a large wok or skillet over high heat. Add the marinated beef in a single layer and cook undisturbed for 1 minute to sear. Stir-fry for another 1-2 minutes until beef is browned but still slightly pink inside. Remove beef from the wok and set aside.
  4. Cook the vegetables
    Add the remaining 1 tablespoon of oil to the wok. Add onions and stir-fry for 1 minute, then add garlic and ginger and cook for 30 seconds until fragrant. Add bell peppers, broccoli, and carrots. Stir-fry for 3-4 minutes until vegetables are crisp-tender.
  5. Combine and finish
    Return the beef to the wok with the vegetables. Give the sauce a quick stir and pour it over the beef and vegetables. Stir-fry for 1-2 minutes until the sauce thickens and everything is well-coated and heated through.
  6. Serve
    Transfer to a serving dish, garnish with sliced green onions, and serve immediately with steamed rice or noodles.
