
Sweet and Sour Pork
Crispy pork coated in a tangy, sweet glaze with vegetables

Marinate the porkIn a bowl, combine the pork cubes with 1 tablespoon soy sauce and beaten egg. Mix well and let marinate for at least 10 minutes while preparing other ingredients.

Prepare the coatingIn a separate bowl, mix the cornstarch and flour. Drain excess marinade from the pork, then coat each piece thoroughly in the cornstarch mixture. Set aside on a plate.

Fry the porkHeat about 2 inches of oil in a wok or deep frying pan to 350°F (175°C). Fry the pork in batches for 3-4 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Make the sauceIn a bowl, whisk together the rice vinegar, ketchup, brown sugar, remaining tablespoon of soy sauce, and 1/4 cup water until the sugar dissolves.

Stir-fry the vegetablesHeat 1 tablespoon oil in a clean wok or large skillet over high heat. Add the garlic and stir-fry for 10 seconds, then add bell peppers and onions. Stir-fry for 2 minutes until vegetables begin to soften but remain crisp.

Combine everythingAdd the pineapple chunks to the wok and stir-fry for 30 seconds. Pour in the prepared sauce and bring to a boil. Stir in the cornstarch slurry and cook until the sauce thickens, about 1 minute.

Finish the dishAdd the fried pork to the wok and quickly toss to coat with the sauce. Ensure everything is well-combined but don't stir too long or the pork will lose its crispiness.
