  1. Prepare the chicken
    In a large bowl, combine the beaten eggs, salt, and pepper. In a separate bowl, place the cornstarch. Dip the chicken pieces into the egg mixture, then coat with cornstarch, shaking off any excess.
  2. Fry the chicken
    Heat vegetable oil in a large skillet or wok over medium-high heat. Working in batches, fry the coated chicken pieces for 4-5 minutes until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
  3. Make the sauce
    In a medium saucepan, combine honey, soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger. Bring to a simmer over medium heat and cook for 3-4 minutes until slightly thickened. Stir in 2 tablespoons of sesame seeds.
  4. Coat the chicken
    Return the fried chicken to the skillet or wok over medium heat. Pour the sauce over the chicken and toss gently to coat each piece evenly. Cook for an additional 2 minutes until the sauce has thickened and is clinging to the chicken.
  5. Serve
    Transfer the sesame chicken to a serving platter. Sprinkle with remaining sesame seeds and sliced green onions. Serve immediately with steamed rice and your favorite vegetables for a complete meal.
