Sweet and crispy shrimp with candied walnuts in creamy sauce

Prepare the candied walnutsIn a medium saucepan, bring water and sugar to a boil. Add walnuts and boil for 2 minutes. Using a slotted spoon, transfer the walnuts to a baking sheet lined with parchment paper, making sure to separate the pieces. Allow to cool and dry completely, about 10 minutes.

Make the honey cream sauceIn a medium bowl, whisk together mayonnaise, honey, sweetened condensed milk, and lemon juice until smooth and well combined. Cover and refrigerate until ready to use.

Prepare the shrimpPat shrimp dry with paper towels. Season with salt. Dip each shrimp in beaten eggs, then coat thoroughly with cornstarch, shaking off any excess.

Fry the shrimpHeat oil in a large deep skillet or wok to 350°F (175°C). Fry shrimp in batches for about 2-3 minutes until golden and crispy, being careful not to overcrowd the pan. Transfer to a paper towel-lined plate to drain excess oil.

Toss and serveIn a large bowl, gently toss the fried shrimp with the honey cream sauce until well coated. Transfer to a serving plate, top with candied walnuts and garnish with chopped green onions. Serve immediately while still warm.
