
Shrimp Scampi Pasta
Succulent garlic shrimp tossed with linguine in a lemon butter sauce

Prepare the pastaBring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente, usually 9-11 minutes. Reserve 1 cup of pasta water before draining.

Prepare the shrimpWhile the pasta is cooking, pat the shrimp dry with paper towels and season with salt and pepper. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp and cook for 1-2 minutes per side until they turn pink and opaque. Remove from the skillet and set aside.

Make the scampi sauceIn the same skillet, reduce heat to medium and add the remaining olive oil and butter. Once the butter has melted, add the minced garlic and red pepper flakes. Cook for 30 seconds until fragrant, being careful not to burn the garlic. Add the white wine and lemon juice, then simmer for 3-4 minutes until slightly reduced.

Combine pasta and sauceAdd the drained linguine to the skillet with the sauce. Toss to coat the pasta, adding a splash of the reserved pasta water if needed to loosen the sauce. Return the cooked shrimp to the skillet.

Finish and serveAdd the lemon zest, chopped parsley, and grated Parmesan cheese. Toss everything together until well combined and the cheese is melted. Taste and adjust seasoning with salt and pepper if needed. Serve immediately in warm bowls with additional Parmesan cheese on the side.
