  1. Prepare the marinade
    In a bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, dill, parsley, thyme, Dijon mustard, honey, salt, and pepper until well combined. Set aside 2 tablespoons of the mixture for serving.
  2. Marinate the salmon
    Place salmon fillets in a shallow dish, skin side down. Pour the marinade over the salmon, ensuring the tops are well coated. Cover and refrigerate for at least 10 minutes or up to 30 minutes.
  3. Preheat the grill
    While the salmon is marinating, preheat your grill to medium-high heat (about 375-400°F). Oil the grates well to prevent sticking.
  4. Grill the salmon
    Place salmon fillets on the grill skin side down. Close the lid and cook for 6-8 minutes without moving them. This allows the skin to crisp up and prevents sticking.
  5. Flip and finish cooking
    Carefully flip the salmon and grill for another 2-3 minutes until the fish is opaque and flakes easily with a fork. The internal temperature should reach 145°F at the thickest part.
  6. Rest and serve
    Transfer the salmon to a serving platter and let rest for 2 minutes. Drizzle with the reserved herb mixture, garnish with additional fresh herbs if desired, and serve with lemon wedges.
