  1. Prepare the marinade
    In a large bowl, combine olive oil, lemon juice, parsley, basil, thyme, minced garlic, lemon zest, red pepper flakes (if using), salt, and black pepper. Whisk until thoroughly mixed.
  2. Marinate the shrimp
    Add the peeled and deveined shrimp to the marinade, tossing gently to coat each piece. Cover the bowl with plastic wrap and refrigerate for 15-30 minutes. Don't marinate longer than 30 minutes as the acid in the lemon juice will begin to cook the shrimp.
  3. Prepare the skewers
    Thread the marinated shrimp onto the pre-soaked wooden skewers, about 4-5 shrimp per skewer, leaving small spaces between each piece to ensure even cooking. Reserve any remaining marinade for basting.
  4. Preheat the grill
    Preheat your grill to medium-high heat (about 400°F/200°C). If using a grill pan, heat it over medium-high heat. Lightly oil the grill grates or pan to prevent sticking.
  5. Grill the skewers
    Place the shrimp skewers on the preheated grill. Cook for 2-3 minutes per side, or until the shrimp turn pink and opaque and reach an internal temperature of 145°F (63°C). Baste occasionally with the reserved marinade during the first half of cooking.
  6. Serve
    Transfer the cooked skewers to a serving platter. Garnish with additional fresh herbs if desired and serve immediately with lemon wedges for squeezing over the top.
