  1. Prepare the steak
    Pat the steak cubes dry with paper towels and season generously with salt and pepper. Allow the meat to come to room temperature for about 30 minutes before cooking for more even searing.
  2. Heat the pan
    Heat a large cast-iron skillet over high heat. Add the olive oil and wait until it's shimmering hot, almost smoking.
  3. Sear the steak
    Add the steak cubes to the hot pan in a single layer, being careful not to overcrowd (work in batches if necessary). Sear for 1-2 minutes on each side without moving them to develop a golden-brown crust. The inside should remain medium-rare to medium.
  4. Create the garlic butter sauce
    Reduce heat to medium. Add butter to the pan and let it melt. Once melted, add minced garlic, rosemary, thyme, and red pepper flakes (if using). Cook for 1 minute until fragrant, stirring constantly to prevent the garlic from burning.
  5. Coat the steak
    Add the Worcestershire sauce and toss the steak bites in the garlic butter mixture, coating them thoroughly. Cook for another 1-2 minutes until the steak reaches your desired doneness.
  6. Finish and serve
    Remove from heat, drizzle with fresh lemon juice, and sprinkle with chopped parsley. Serve immediately while hot, spooning extra garlic butter sauce over the steak bites.
