  1. Marinate the beef
    In a medium bowl, combine sliced beef with 1 tablespoon soy sauce and 1/2 tablespoon ground black pepper. Toss to coat evenly and let marinate for 10 minutes at room temperature.
  2. Prepare the sauce
    In a small bowl, whisk together the remaining soy sauce, oyster sauce, beef broth, and cornstarch slurry. Set aside.
  3. Sear the beef
    Heat 1 tablespoon oil in a large wok or skillet over high heat until smoking. Add the marinated beef in a single layer and sear for 1-2 minutes per side until browned but not fully cooked. Remove beef and set aside.
  4. Cook the vegetables
    In the same pan, add the remaining oil. Add onions and stir-fry for 2 minutes until translucent. Add garlic and cook for 30 seconds until fragrant. Add all bell peppers and stir-fry for 3-4 minutes until peppers are slightly softened but still crisp.
  5. Combine and finish
    Return the beef to the pan with the vegetables. Pour in the prepared sauce and remaining black pepper. Stir-fry for 2-3 minutes until the sauce thickens and coats everything evenly. The beef should be cooked through but still tender.
  6. Rest and serve
    Remove from heat and let rest for 1 minute to allow flavors to meld. Serve hot over steamed rice or with your favorite side dishes.
