
Beef Lo Mein
Savory stir-fried noodles with tender beef and vegetables

Prepare the noodlesCook the lo mein noodles according to package instructions until al dente. Drain, rinse under cold water to stop the cooking process, and toss with a small amount of vegetable oil to prevent sticking. Set aside.

Marinate the beefIn a medium bowl, combine the sliced beef with 1 tablespoon soy sauce and 1 teaspoon cornstarch. Mix well and let marinate for at least 10 minutes while preparing other ingredients.

Make the sauceIn a small bowl, whisk together the remaining soy sauce, oyster sauce, sesame oil, and brown sugar until well combined. Set aside.

Cook the beefHeat 1 tablespoon of vegetable oil in a large wok or skillet over high heat until smoking. Add the beef in a single layer and cook for 1-2 minutes per side until browned but still slightly pink inside. Remove from the wok and set aside.

Stir-fry the vegetablesAdd the remaining tablespoon of oil to the wok. Add garlic and ginger and stir-fry for 30 seconds until fragrant. Add onions and stir-fry for 1 minute. Add carrots and bell peppers and stir-fry for 2 minutes. Add bok choy and cook for another minute until vegetables are crisp-tender.

Combine everythingReturn the beef to the wok. Add the cooked noodles and the prepared sauce. Toss everything together using tongs or two large spoons, ensuring the noodles and ingredients are well coated with sauce. Cook for 1-2 minutes until everything is heated through.

Finish and serveAdd the green onions and red pepper flakes if using. Toss once more to combine. Taste and adjust seasoning if needed. Serve immediately in large bowls, garnished with additional green onions if desired.
